Today it feels like not much of anything was done or achieved at all, don’t you just hate days like that? I can’t believe it’s just passed dinner time. I had a few plans as well to make soup and cakes, well the cakes got made, but the soup didn’t. We did manage some work with our naughty boy dogs and they are doing much better. We also went to the shop to buy a hand mixer as we didn’t have one, but that’s it. Really? Where the heck has the day gone…?
I haven’t baked by myself since I was 13yrs old, that’s a good 15yrs ago 😮 Well I braved the kitchen and made some fairy cakes, nice and simple and they don’t taste dreadful – I count this as a success!

Coffee Chocolate Fudge Fairy Cakes
- 60g Dark Chocolate
- 1 Tbs Cocoa Powder
- 30ml Milk
- 30ml Water
- 1 Tbs Coffee (instant)
- Self Raising Flour
- 1 Medium Egg
- 60g Butter
- 50g Caster Sugar
- Topping of Choice
Cream Butter and Sugar together until light and fluffy, add egg and mix until combined.
Sieve in Flour and Cocoa Powder and mix well.
Melt Chocolate on stove in bowl over a pot filled with hot water. Add melted Chocolate to Flour mix and mix thoroughly.
Add Coffee to Water and stir until dissolved. Add coffee mixture and milk to flour mix and mix until all combined.
Spoon into cake cases and place in preheated oven.
Remove after approx 20 mins and allow to cool.
Once cooled, add frosting and any other toppings of choice.

When these were done I spent some time with Lizzie who’d been with her dad whilst I was baking and we switched over so he would cook us a lovely Tikka Massala Curry for dinner – It was delicious and I was so hungry by the time he made it I forgot to taste as I inhaled it and wish he’d made enough for seconds. We played whilst daddy cooked.
Then a sudden idea came to mind to do out first craft for the home. I made the preparations real quick as it required some cooking – Salt Dough! We have done another footprint for hanging in the nursery and we have some bone shapes to paint, which will be name plaques with our dog’s names on, which Lizzie will paint tomorrow (probably) 🙂
