Quick Lunch/Starter Recipe: Tuna Stuffed Peppers.

Quite a healthy lunch for us today and they tasted good to boot! I’m definitely a much better cook than I am baker, but I’m working on learning. I officially can’t bake a cake as you will see later, but I can do pies, crumbles, fridge cakes, tray bakes and I’m going to try biscuits soon, but cakes are not my forte 😦

Anyhoo, These only take 20 minutes at 200 degrees Celsius in the oven.

  • 1 x Tin Tuna (drained)
  • 2 x Bell Peppers
  • 3 Tbs Tomato Puree
  • 2 x Chili Peppers (Red & Green) (deseed)
  • 2 Tbs Smoked Paprika
  • 2 Tbs Mixed Herbs
  • Cheese

Combine Tuna, Tomato Puree, Chili Peppers, Paprika and Herbs in a bowl and mix thoroughly.

Slice Peppers into halves and remove stalk, core and seeds.

Spoon Tuna mixture into each of the halves of the peppers and place in the preheated oven at 200 degrees Celsius.

Cook for 20 minutes – Add Grated Cheese and place back in the oven briefly until melted.

Serve immediately.
